Ummmmmm. It’s Sour Cream. SOUR CREAM. Just made out of cashews…not animal milk.

This. Makes me. Happy.I just had my hands on junky store bought vegan sour cream that was filled with crap. THIS..is not.

Hello Onion Dip, baked potatoes, plain yogurt, you get where I’m going….. Oh. And its RAW and filled with pro-biotics.

Plain Sour Cashew Cream

1c cashews, soaked for an hour (this step can be skipped)

5 capsules vegan probiotics (empty powder and dispose of the capsule) or 1t powder

3/4 +up to 3T filtered water

1/2t pink salt

1T lemon juice (omit if fresh is not available)

Step 1.

In a Vitamix or high-powered blender, add the cashews (drained if soaked), the probiotic powder, water.

Blend this at a lower speed initially to well incorporate the contents, speed up the motor as it gets blended. You will need to process this for at least 3-5 minutes until the cashews are absolutely creamy. Scrape down the sides intermittently and be sure to get all possible ‘pieces’ of cashews blended into the mix. Add a T of water as needed if the mixture gets stuck or if the mixture seems to thick. If you run this too fast, the contents will heat up, creating an oily mixture.

When totally creamy and smooth, remove to a glass or stainless steel bowl and set in a safe, warm place- I place mine in the dehydrator at about 100 degrees and let it run overnight. You could also in lieu of a dehydrator, place it in a warm spot in your kitchen, covered. Leave this overnight or for 24hours.

Step 2.

Mix in the salt and lemon juice. Transfer to a container and place in the fridge for at least 6 hours to set, best, overnight. If this set up thicker than desired, add a little bit of water to loosen it up to the desired consistency.

Super simple after an intense Crossfit workout: 300 double unders, 10 Cleans (#83 pounds), 50 front squats (#83 pounds), and 60 tricep dips….WOOOF! I finished and about 45 minutes after I WAS HUNGRY!!! I usually add lots of veggies into my scramble but today I was just feeling SIMPLE and it was SO delicious….the miso lends a “cheesiness” that was just yummy. I ate my greens on the side and had whole grain toast with coconut oil spread on top, and a side of my home made Kombucha and I did not want for anything…..FRICKEN YUM.

Simple Tofu Scramble

1 package (15oz) firm tofu, crumbled

2t xvo

1T coconut oil

½ medium onion, small diced

1/4c nutritional yeast- more if desired!

1 clove garlic, minced

1/2t ground turmeric

1/2t salt

1/4t black pepper

2t miso

2T water- more if needed

Mix the miso paste with the water and set aside.

In a heated skillet or fry pan over medium high heat, heat up the oil and add the onion, garlic, turmeric, salt, black pepper and sauté until aromatic and golden.

Add the crumbled tofu and sauté over medium heat, stirring frequently for 2-3 minutes, coating the tofu with the onion mixture. Cover the pan and steam for about 2-3 minutes.

Remove the lid and mix the miso paste into the scramble. Sprinkle in the nutritional yeast and mix until well incorporated.

Serve immediately with toast or in a breakfast tofu burrito, sprinkled with additional nutritional yeast.

1 banana, ripe

1 heaping T tocotreinols

1T gold flax seeds

1T acai powder

1T chia seeds

1T coconut oil

1t vanilla powder

2 scoops protein powder

Dash cinnamon

1c ice

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and blend just until smooth.

1 heaping T tocotrienols (vit-e)

1T gold flax seeds

1T coconut oil

1t vanilla powder

1scoop protein powder

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and blend just until smooth.

2c chopped, frozen bananas

1 heaping T tocos

1T gold flax seeds

1T coconut oil

1t vanilla powder

1 scoop protein powder

1c ice

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and blend just until smooth.

Chipotle Tempeh

Chipotle Tempeh

8oz or 1 package tempeh (I used Flax), sliced in ½ and then thin slices

2T coconut or olive oil

1 clove garlic, minced

1t pink salt

1t chipotle powder

1/4t black pepper

2T nutritional yeast

In a large skillet or cast iron pan that has been heated over medium to high heat, add the oil and garlic.  Add the tempeh slices and pan fry until golden brown and then flip, about 3-5 minutes per side, lower the heat if necessary. Remove all contents of the pan into a small-ish bowl and toss with the salt, peppers, and nutritional yeast. Serve immediately or cold.

Delicious over fresh salad greens.

This dressing is an awesome go to dressing, packed with protein, fiber, nutrients and minerals all without any added oils or fats. Amazing on mixed fresh greens.

Lemon Poppy Seed Sunflower Dressing

1 1/2c raw, (sprouted & dehydrated is ideal) sunflower seeds

2 to 2 1/2c filtered water

2T sesame seeds

2 lemons, juiced

2T mellow miso

4T poppy seeds

2t stone ground mustard

1t paprika

1 clove garlic, smashed

salt and pepper to taste

Blend all of the ingredients, except the poppy seeds, together in a high powered blender. Add more water if a thinner dressing is desired.
