Summer berries…I can’t get enough…this smoothie is also filled with belly loving probiotics, if you don’t have vegan kefir on hand, you can sub a non-dairy milk or a fruit kombucha for the  liquid (mango or berry is amazing). It has an incredible tangy-ness that is so delicious, reminiscent of a Fruit Lassi and is my go to beverage post Hot Yoga.

Coconut Kefir Blueberry Love Bomb Lassi

1c fresh or frozen blueberries

1c prepared almond kefir or cashew milk

1T chia seeds

1t raw honey or 1 date

3/4c raw coconut yogurt

1c ice

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and process just until smooth.

June is STRAWBERRY MONTH!!! I can literally pound a quart back in the car before I even get them home so around this time I buy them every time I see them. I clean, trim, half  and freeze them so I can have them all through the year. A good freezing tip is to place them on a cookie sheet or plate and place them in the freezer so that they are just frozen enough to handle. Remove them from a plate and into a storage container- this way you don’t have a giant block of strawberry ice to contend with. The local berries are just incredible. I am planning a pick your own trip to maximize my habit.

Raspberry Shallot Vinaigrette

You could definitely omit the fruit or add in another fruit of your choosing but the raspberries give this dressing a beautiful pink color. I ate this over spring greens with raw dehydrated sunflower seeds and cubed gluten free smoked tofu.. #DELICIOUS

Raspberry Shallot Vinaigrette

 1/2c extra virgin olive oil

1/4c red wine vinegar or lemon juice

2T apple cider vinegar

2T Dijon mustard

5 fresh raspberries

1T real maple syrup or raw agave

1 shallot, smashed and minced

salt and pepper to taste

Add all of the ingredients into a blender except the olive oil. Blend well. While the motor is running, drizzle in the olive oil. This will cause the dressing to emulsify. Season to taste.
