Coconut Lime Cream Power Smoothie

1/2c fresh coconut meat

1T coconut oil

1T fresh lime

1T chia seeds

1T hemp seeds

1 scoop protein

2t coconut sugar or honey

1c nut milk

1t vanilla

1c ice

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and blend just until smooth.

1/2c cashews soaked for an hour

2c water

10 deglet dates-more or less for desired sweetness (could be replaced with 1/4c raw agave or maple syrup)

1/4t nutmeg

1t vanilla

1/2T coconut oil

1t maca powder

1/2t cinnamon + additional for dusting

In a blender, combine all ingredients and process until smooth.

Pour into serving glasses and dust with cinnamon. Can serve over ice or blended with ice for a thicker smoothie style beverage.

I have to say this spiked with a spiced rum is the OPPOSITE of not good.

SO. FRICKEN.FESTIVE.

RAW Lime Cashew Cheesecake with Local Blackberries (crustless)

I was just in the mood for the lime cheesy part so I chose to forgo the crust and pile fresh/ frozen blackberries from this summer on top instead. I have given the nut crust which really makes it SUPER awesome but is really not always necessary!

RAW Lime Cashew Cheesecake

1 1/2c raw cashews

1/4c raw honey or raw agave

1/4c coconut oil

1/4-1/3c water

2T cocoa butter

1/4t salt

Juice and zest of two limes

1t vanilla

Optional Nut crust

½c dehydrated raw almonds

2T raw agave

1T coconut oil

1/4t cinnamon

Prepare the Nut crust:

In a dry food processor or blender, whizz the nuts until a fine meal, turn out into a bowl and mix the other ingredients in. The mix should be moist, and hold it’s shape when pinched. In your serving dish, press the nut mix into the bottom and up the sides of the dish/pan. Set aside.

Prepare the filling:

In the same blender, add all of the ingredients for the filling and process until very smooth. Add 1/4c of water to start, more if you need to make it run smoothly. *If you’re mix is not entirely smooth, pass through a fine mesh sieve to remove any bits of nut.*optional

FRUIT TOPPING:

ANY fresh fruit slices!

Kiwi, Strawberries, Blueberries ETC

Pour the mixture into the prepared crust/dish/pan. If layering with fresh fruit, have the fruit ready to be arranged on top. Can also be served with fresh fruit at the time of serving.

Macerated berries- top the cake and swirl in before the set up.

Blackberries for Raw Cheesecake

1c frozen blackberries

1T Agave syrup

½ lemon, juiced

pinch salt

1/4t vanilla

In a bowl, combine all ingredients and let sit. Slightly mash with the back of a spoon.

Let stand and macerate for at least one 1/2 hour.

For a smoother finish, this can be placed in the blender or even partially blended.

Raw Cashew Cream Cheese- Savory

1c raw cashews

1c raw sauerkraut (not pasteurized)

1T dulse flakes

1t raw agave or raw local honey

1 clove garlic

1/2t pink salt

3T of coconut oil

3-4T water- just enough to process until smooth- less is better!

In a blender, add in all of the ingredients except the water and blend until totally creamy and smooth. Add the water as needed, 1T at a time. Pour into a jar with a locking lid (gasket, air sealed) and close it up. There should be at least 3 inches of space to give the cheese a chance to bloom. Label it, date it and place in a dark and warm place for 12-24 hours.

Transfer the jar into the refrigerator and allow to set up and cure for at least a week.

This is a pro-biotic rich cheese!

2T cacao nibs

Peach Goji Berry Power Smoothie

My peaches are just coming about now; I have two baby trees that are loaded with fruit and one mature tree not so many peaches, both sweet yellow and white peaches. I used white peaches this morning. This smoothie reminds me of a Lassi, or kefir drink- it’s so delicious, super summery and filled with amazing ingredients from antioxidants to omega 3′ fatty acids.

1 heaping T of goji berries

1T gold flax seeds

Deliciously crisp and fresh tasting- make this and no one will know that there is anything “special” about this slaw other than it’s awesome taste.

1 small green cabbage, thinly sliced, or shredded (4CUPS)

1 carrot, grated

Salt

Dressing:

1/4c Extra Virgin Olive Oil

1T Hot Sesame Oil

3T Apple Cider Vinegar

2T Agave Nectar, or maple syrup

2t brown rice vinegar

1t ume vinegar

Salt and pepper to taste

2T toasted sesame seeds

In a large bowl, place the shredded cabbage and salt it generously, allow it to sit for several hours, even overnight with a plate on top. This will release the liquid in the cabbage, which you will drain out. This removes any bitterness and makes the cabbage more digestible and more tender.

After draining, add in the other ingredients and toss well. Serve chilled.

Heirloom Tomatos, Garlic, Basil, & Olive Oil with Grilled Artisan Bread

I had purchased this beautiful heirloom tomato at the Farmer’s Market on Saturday and it took me until today to actually think of something to make using it- I didn’t want to cook it; although a fresh Tomato Basil Soup or Gazpacho would have been amazing. A fresh pasta sauce crossed my mind but this thing was 5″ across and GORGEOUS. I have been reading Michael Pollan’s latest book “Cooked” and last night was on the chapter about bread and it lit me up about the local artisan loaf I purchased the same day at the market…10% Rye Sourdough with Sesame. I had eaten a lot of it on Saturday so I sliced it and put it in the freezer. So I knew today was the day. Today was the tomato day. Variations on a theme, there is nothing like the basil, garlic, tomato trilogy; everything local and in season. I ate it as a series of open faced sandwiches, I say a series, because I grilled 4 slices and ate all 4 slices…..

For the tomatoes

Local, fresh, summer tomatoes, preferably heirloom, sliced

plenty of fresh basil

1 clove garlic, smashed and minced

fresh hot chili pepper

extra virgin olive oil

pink salt

black pepper

for the bread

artisan loaf of bread

garlic, smashed and minced

Heat up the grill or grill pan.

Prepare the bread:

Slice the bread into ¼-1/2” slices, how ever many slices you and friends will eat (2-3 per person or 4 if I am coming over)

In a small plate, add the garlic, olive oil. Lightly brush the bread slices with the oil and set aside.

Over high heat, place the bread on the grill or pan and close the grill or cover the pan. Let grill for about 3-4 minutes. The bread should easily flip and have gorgeous markings. Once flipped, continue to grill for another 3-4 minutes.

Serve immediately with the fresh tomato slices on top drizzled with more garlic olive oil, salt pepper and basil.

Such an easy way to drink your greens! Baby spinach is really quite benign in smoothies, unlike Kale (blech), I am not a kale-in-my-smoothie kind of girl, spinach on the other hand, I can do. Creamy and sweet, this smoothie is a super satisfying way to start the day or to be indulged as total nourishment after a killer workout. Adding the nibs in with the ice leaves bits of the superfood madness that is raw cacao to be enjoyed as the “chip” part.

*2T raw cacao nibs

1T chia seeds

1t vanilla

Large handful baby spinach

1scoop protein powder

1c ice

Blend all ingredients together except the ice and cacao nibs and process until smooth- taste and adjust if needed.

Add the ice and the nibs blend just until smooth.

*if you would prefer total smoothie smoothness, blend the nibs in with everything else, then add the ice.
