Everything local, the broccoli, potatoes, carrots, garlic, even the ginger. Such an easy soup, so delicious and warming. You could replace the brown rice with another grain or even with a pasta of your choosing.

Broccoli & Potato Soup with Brown Rice

2c potatoes, peeled and medium diced

1c onion, small dice

1 carrot, small dice

1 bunch broccoli, separate florets, stems medium dice

1 bouillon or veggie broth to replace the water

4c boiling water

1” piece of fresh ginger, grated

1-2c cooked brown rice

1t Hot sesame oil *opt

½ t black pepper

2T olive oil

In a separate kettle, heat up the water. In a soup pot, heat up the olive oil. Add the onions and sauté until golden. Add the carrots and cook for a minute or so before adding the potatoes, broccoli stems and the rice. Add in salt and pepper, hot pepper, and stir until well incorporated. Cover with the hot water and add the bouillon.

Bring to a boil and let simmer for 25-30. Add the broccoli florets, ginger and the sesame oil and simmer for an additional 5-10 minutes. Adjust the seasonings.

Fusili with Broccoli & Garlic

Pasta With Broccoli & Garlic

 1 head broccoli, washed, cut, trimmed into bite size pieces

1/4c fresh parsley/ basil *optional

1/4c +1 T XVO

1T vegan butter

2 cloves garlic, smashed and minced

¼ fresh chili pepper, minced or pinch red pepper flakes

1/2t pink salt

1/4t fresh ground black pepper

1 pound of preferred pasta- I use Gluten Free.

In a large heated frying pan over medium heat, add the 2T of olive oil, hot pepper and 1/2 of the garlic and sauté just until golden, not browned. Add the broccoli and toss in the pan until well incorporated and turns bright green and tender- about 5-10 minutes- Season with salt and pepper to taste. Set aside off heat.

In the same pan, add the remaining olive oil, remaining garlic and sauté just until golden. Add the cooked pasta and season with salt and pepper. Add the cooked broccoli back in and toss in the butter.

Chop up the fresh parsley or basil just before serving and toss into the mix.

Serve immediately topped with vegan parmigiana or nutritional yeast.

FRICKEN DELICIOUS.

Spicy Sesame Tofu

I didn’t even press the tofu- which lends for a firmer texture, and it came out awesome. Fresh ginger would be and is AMAZING in this, I just didn’t have any in the house. I ate this with a big bowl of Sautéed Kale and Sprouted Quinoa, and my homemade Siracha Sauce. FRICKEN DELICIOUS.

        Spicy Sesame Tofu            

1-pound firm tofu, cut into cubes

2T extra virgin olive oil

1T tamari or shoyu

2t agave or maple syrup

½ of one fresh hot pepper or 1/2t hot pepper flakes

1 clove garlic, smashed and minced

2T nutritional yeast

1t hot sesame oil

1/4t pink salt

2T un-hulled sesame seeds

In a large skillet or frying pan, heat up the oil and add the garlic, hot pepper and sesame seeds and sauté just until barely golden. Add in the tofu and pan fry over medium high heat, tossing often to brown all sides- about 6 minutes. Add in the tamari or shoyu and coat the tofu well by tossing the tofu around the hot pan- almost until the tofu appears dry. Add in the sweetener and the hot sesame oil and continue to toss. In the last moments of cooking, add in the nutritional yeast and coat the tofu. Serve hot or cold.

*Fresh ginger is AMAZING in this. Add in 1” piece- grated when sautéing the garlic.

Spicy Split Pea Soup

I make this soup at least two to three times a month- It is truly my comfort food- my Dad LOVES this soup. Chipotle powder is what gives this soup its’ smokey flavor. Chipotle powder is a smoked dried Jalapeno with a delicious hot smokey/sweet flavor and is a spice that is always in my kitchen. If you can find liquid smoke, or smoke salt, or another natural smoke flavoring, it adds another layer of tremendous flavor that is typically found in traditional meat based split pea soup. Today I didn’t blend it at all, so I cut the vegetables uniformly. I also added a small thin skinned potato, diced in the last 15 minutes of cooking 1) cuz I had it in the house and 2) potatoes are YUMMY.

Wheat-Free, Gluten-Free

SPLIT PEA SOUP

3T olive oil

1c green split peas

1 small red or yellow onion, medium diced

1 small potato, medium diced *opt

1 small carrot, medium diced

1 veggie bouillon (or replace water with veggie broth)

4c water, pre-boiled

1t chipotle powder

1/2t cayenne pepper or 1 fresh hot pepper or chili

Salt and pepper to taste

2T Fresh parsley- to be added in at the end of cooking time

Heat up 6 cups water, in case you need more.

In a soup pot, heat up the olive oil. Add the onions and sauté until golden. Add the carrots and cook for a minute or so before adding the peas. Add in the spices and stir until well incorporated. Add the peas, cover with the hot water, and add the bouillon.

Let simmer for 45-60 minutes or until everything has softened and the peas have broken down. If you prefer your soup unblended- be sure to cut the veggies small and uniformly so they are pleasant on the spoon. **If blending, you can partially blend or puree the mixture to the desired consistency.

Season to taste.

**Use caution when blending hot liquids

FOR PUREED SOUP:

In batches, in a blender or vitamix*, puree the split pea soup. Adjust the seasonings before serving.

*Caution: blending hot liquids can be extremely dangerous. Fill the blender only half way and proceed in batches if necessary.

Fall Green Tomato Soup

This soup would be killer with fresh cilantro. When I moved out of Putney, I had so many green tomatoes still left on the vine that initially I though I was  going to pickle or marinate, after several days in a wood bowl in the new place, something had to happen….and soon!…what I had was a ton of fresh parsley, local celery and carrots, and hot peppers and onions…. I didn’t process this to completely smooth, I left it sort of rough, definitely blended,  but with texture….You could for sure make this more substantial by adding red lentils or pasta for a delicious protein fix however the simple taste of the fall veggies alone are super spectacular…..SO delicious.

Fall Green Tomato Soup

3c chopped fresh green tomatoes

1 one red onion, medium dice

1 carrot, medium dice

1 stalk celery, medium dice

3t extra virgin olive oil

1T raw agave or maple syrup

½ fresh jalapeno or cherry bomb pepper, medium dice

1/4t fresh black pepper

1/4c fresh parsley

1/2t pink salt

3c water

1 veggie bouillon or replace the water with veggie broth

Heat up a soup pot over medium heat. Add the olive oil and the chopped onions, carrots, and celery. Sautee until they are just golden. Add the fresh hot pepper, salt and black pepper and toss around in the pan for a minute or so before adding the fresh tomatoes. Cover with the water (or broth) and bring to a boil over medium heat- about 10 minutes or so. Puree and add in the fresh parsley, adjust seasonings and serve. Top with nutritional yeast and fresh black pepper. YUM!

Tempeh 1/4 Pounder (Faux Chicken Sandwich)

Does this satisfy a craving or what? It is absolutely one of the best vegan burgers I have ever had. Simmering the tempeh in broth prior to pan frying “opens up” the tempeh and also softens it, allowing for a ton of flavor to be added into the burger. I dredged mine in a cornmeal coating prior to pan frying giving it more texture and depth as a whole inside the sandwich. Absolutely delicious.

Wheat-free, can be made Gluten-free by using GF bread or rolls

Makes 2 sandwiches (½ the recipe for one serving)

          1 block of tempeh (4oz each portion)

1 vegetable “chicken” bouillon or 2c vegetable broth

1 tomato, sliced thin

¼ of a small red onion, sliced, thin

yellow mustard

 veganaise

vegan cheese *optional

4 leaves, green leaf lettuce

 prepared ketchup

2 rolls, buns, slices of bread of choice (wheat-free or gluten-free)

Prepare the tempeh:

Cut the tempeh in half. In about 2 cups of water or veggie broth, in a small pot, bring the tempeh and 1 veggie boullion (or broth) to a boil. Reduce heat and simmer for 5 minutes. Let steep for another 10 minutes covered, allowing the tempeh to soak up the flavor of the broth.

*EXTRA STEP optional…Coating the tempeh

The coating makes for more of like a chicken sandwich style burger, like a breaded cutlet- SUPER YUM…..

2T cornmeal

1T nutritional yeast

1/4t salt

1/4t ground black pepper

Pinch ground cayenne pepper

1/4t chipotle powder

Olive or Grape seed oil for pan-frying

Salt and pepper to taste

In a toaster, place either the sliced bread or rolls in and toast.

Preheat a large sauté pan or skillet, over medium heat. Add the olive oil. Place the tempeh halves in and reduce the heat to low. (*if corn crusting, remove the from the broth and dredge them directly into the cornmeal coating then proceed to the next step.) Pan fry covered 2-3 minutes on each side. If using vegan cheese, after the tempeh has been flipped once, places the slices of vegan cheese on top, 1oz each return the top and continue to cook for another 2-3 minutes.

When the bread is toasted, spread veganaise, mustard, slices of tomato and red onion and top it with a couple of leaves of lettuce. On the other pieces of bread or roll (the other side of the sandwich), put the ketchup.

Place the cooked “patty” on top of the lettuce, sprinkle with salt and pepper and cover it with the twin bread or roll with ketchup. Serve with a fermented dill pickle and a side of booch.

Green *FRICKEN AMAZING* Falafel

GREEN FALFEL 

Unbelievably delicious……this greened Falafel can be served as an appetizer with hummus and lemon tahini sauce or as a main course. Stuff whole grain Pita Bread with falafel, lettuce, tomatoes, lemon tahini sauce, salt and pepper. As an alternative, falafel can be formed into patties and eaten like a veggie burger. SO FRICKEN YUM.

Makes over a dozen patties. Can be easily frozen.

3c fresh kale, de-stemmed, torn into small pieces

3c chickpeas, cooked, rinsed, drained (= about 2 cans)

1 onion, rough chopped

1/4c fresh parsley

3T tahini- I use raw

1T cumin

1T pink salt

4 cloves garlic, smashed

1c cooked brown rice

1/2c barley flour

2 lemons, juiced

Olive or grape seed oil for pan-frying.

Combine all ingredients except the barley flour in a food processor and process until a smooth paste is formed. Taste and adjust the seasonings; more salt, more cumin, more lemon juice etc. ßto your liking.

Heat up a large cast iron skillet or frying pan over low heat.

Transfer into a mixing bowl and add the flour and mix in until well incorporated.

Add the oil into the hot pan. With a cookie scoop, scoop out the chickpea mixture and place in the pan, not overcrowding. With a spatula, gently flatten the domes. Cook for 5-6 minutes per side or until they are golden brown crusted and then flip. Remove to a plate. Eat cold or hot! Serve with Lemon Tahini sauce.

Lemon Tahini sauce 

Juice of 1 lemon

½c tahini

pink salt to taste

black pepper

1/4c water

In a small bowl, add all of the ingredients and whisk until smooth and to the desired consistency. If a thicker sauce is preferred, use less water. Serve over cooked greens, salads, or falafel.

1 small onion, minced

2T olive oil

2c sweet squash, roasted or steamed- cooked

2T maple syrup, agave, sucanat

2t curry powder

1/4t turmeric

4c hot water or veggie broth

1 veggie bouillon

3t fresh ginger, grated

1/4t cayenne or fresh hot pepper

1/4t salt

3/4c cashew milk *opt

Bring 4c of water to a boil.

In a large soup pot, add the olive oil and sauté the onions with the sweetener until golden and soft. Add the cooked squash, ginger, curry powder, turmeric, salt, black and red pepper. Continue to sauté until the squash, onions, and spices meld, stirring often. Add the boiling water. Bring to a boil and reduce heat and simmer for 15-20 minutes.

In batches, in a blender or vitamix*, puree the soup with the cashew milk. At this point, the soup is delicious without the cashew milk but the crème can be added to create a wonderfully elegant soup. Adjust the seasonings again after adding the crème.

1c almond or cashew nut milk

1T hemp seed

2t raw agave or raw local honey

1T raw Coconut Manna

1T Maca powder

2T cacao nibs

1T chia seeds

1t vanilla

1scoop protein powder

1c ice

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and blend just until smooth.

Early Fall #NOFAIL Vegetable Soup

All of the vegetables are happening now, everything was either from my garden or local from the farm market. I had made the chickpeas earlier in the week so I had some in the fridge- another bean would fare well. I had sprouted the rice the day before and cooked it to have it in the house. This recipe would be a great way to use up simple leftovers you may have on hand. Any combination of vegetables would be delicious in this, the addition of sautéed greens versus adding them fresh is a boost of flavor for the soup.

Early Fall Vegetable Soup 

1 carrot, sliced on the diagonal

½ onion, medium dice

1 stalk celery, sliced on the diagonal

1 clove garlic, smashed, minced

1 small thin skinned potato, medium dice

1/4t cayenne pepper or ¼ of fresh hot pepper

1/2c chickpeas, cooked

2T extra virgin olive oil

½ ear corn off the cob

2c kale, sautéed or raw

1/2c brown rice, cooked

4c boiling water

2T fresh herbs *optional

Salt

Pepper

Bring 6c of water to a boil- in case you need more.

In a large soup pot, add the olive oil and sauté the onions and garlic until golden and soft. Add the carrots, celery, salt, black and red pepper. Continue to sauté until the veggies turn bright, stirring often. Add the chickpeas, potatoes and the rice, mixing them into the vegetables. Add the boiling water and bring to a boil and reduce heat and simmer for 30-40 minutes. In the last 5 minutes of cooking, add the fresh corn and kale.

Adjust the seasonings before serving.
