Coconut Cream Maca Cacao Nib Chip Power Smoothie

1c almond or cashew nut milk

1T hemp seed

2t raw agave or raw local honey

1T raw Coconut Manna

1T Maca powder

2T cacao nibs

1T chia seeds

1t vanilla

1scoop protein powder

1c ice

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Add the ice and blend just until smooth.

Peach Goji Berry Power Smoothie

My peaches are just coming about now; I have two baby trees that are loaded with fruit and one mature tree not so many peaches, both sweet yellow and white peaches. I used white peaches this morning. This smoothie reminds me of a Lassi, or kefir drink- it’s so delicious, super summery and filled with amazing ingredients from antioxidants to omega 3′ fatty acids.

2 medium peaches or 1 large

1 heaping T of goji berries

1T gold flax seeds

1T coconut manna

1t vanilla

1 scoop protein powder

Blend all ingredients together except the ice and process until smooth- taste and adjust if needed

Fermented Hot Sauce!

This stuff is BOMB. I started making it last year and could not wait for this summer to roll around to plant all of the peppers I could to make it again. SO SIMPLE. You can use any variety of hot peppers, I use a mix of Hot Cherry Bombs, Cayenne, Jalapeño, and Chili’s. Depending on the kind of heat you prefer, you could totes add Scotch Bonnets and Habañeros to the mix for a hotter hot or add some sweet peppers to make it more like a homemade Sriracha Sauce. I also add in some fresh ginger, garlic in addition to the salt in the brine. I eat it on sandwiches, with tofu, just about anywhere I want a little kick in the pants. SO. GOOD.

You Will Need:

  • A glass jar with a gasket lock-tite lid
  • 2-3″ piece of fresh ginger
  • 3-4 cloves of fresh garlic
  • *Salt
  • 3-4c prepared hot/sweet pepper mix, de-stemmed and at least split so that the brine can penetrate the pepper
  • *Brine: Mix 1 heaped tablespoon of a mineral rich good sea salt, like pink or celtic sea salt, per quart water.
  • a small dish to weigh the peppers down once the lid is sealed to keep them under the brine

Hot Sauce

In the clean glass jar, start layering the peppers, ginger and garlic in, tightly packing them and also pounding them in to crush them somewhat.
Layer them tightly! You can salt as you go or you can pre-mix your saltwater brine and pour over the pepper mix.
Leave about 2 inches of space from the top. I use a little porcelain ramekin and close it down with lid onto the peppers (do this over the sink so as not to let what spills out spill all over!)

All of the goodness should be completely submersed under the brine.

THATS’ IT! I put this in my dehydrator, not on, so it can do it’s thing in a safe, warm, undisturbed place for at least two weeks.

After several days you will see bubbles start to happen- Don’t open the jar! TWO WEEKS.

After two weeks, in the sink, because the contents are now under pressure, carefully open the jar- You will most definitely get a POP.

Pour this directly into your food processor or vita-mix and puree completely with ALL of the brine included. If you need more liquid, you can add a little bit of raw apple cider vinegar to the blender. Bottle and store refrigerated. AMAAAAAAZINGNESS.

Deliciously crisp and fresh tasting- make this and no one will know that there is anything “special” about this slaw other than it’s awesome taste.

1 small green cabbage, thinly sliced, or shredded (4CUPS)

1 carrot, grated

Salt

Dressing:

1/4c Extra Virgin Olive Oil

1T Hot Sesame Oil

3T Apple Cider Vinegar

2T Agave Nectar, or maple syrup

2t brown rice vinegar

1t ume vinegar

Salt and pepper to taste

2T toasted sesame seeds

In a large bowl, place the shredded cabbage and salt it generously, allow it to sit for several hours, even overnight with a plate on top. This will release the liquid in the cabbage, which you will drain out. This removes any bitterness and makes the cabbage more digestible and more tender.

After draining, add in the other ingredients and toss well. Serve chilled.

Such an easy way to drink your greens! Baby spinach is really quite benign in smoothies, unlike Kale (blech), I am not a kale-in-my-smoothie kind of girl, spinach on the other hand, I can do. Creamy and sweet, this smoothie is a super satisfying way to start the day or to be indulged as total nourishment after a killer workout. Adding the nibs in with the ice leaves bits of the superfood madness that is raw cacao to be enjoyed as the “chip” part.

*if you would prefer total smoothie smoothness, blend the nibs in with everything else, then add the ice.

Super creamy, raw, and delicious,  this shake will leave you satisfied for hours. Use straight cashew milk for an even more decadent “ice cream” style smoothie. For everyday, I like to use raw almond milk, as it has a lighter taste that compliments the coconut really nicely.

It is bluuuuuueberry time! Fresh berries all day every day! I have already frozen my share of the local love so I can pull from my freezer all winter. I throw them in smoothies, pancakes and baked goods. This smoothie is super delicious with or without the Maqui.

Basic Awesome Nut Milk

Since learning about nut milks, I have not puchased a box of soy, almond or rice milk- or any other milk for that matter since. I use it almost every day for making sweet breads, smoothies, creaming up soups, adding to gravies- you name it. The even MORE basic version is nuts and water in the blender- that’s it. In a pinch you can even use a nut butter and water and blend-and there you have it, milk. With these slightly flavored versions, they are delicious on their own or for use in cereals and shakes.

Almond:

1c almonds- soaked overnight

4c water

1T coconut oil/butter

2T raw agave

2t vanilla

pinch Himalayan sea salt………

Cashew:

3/4c raw cashews

4c water

1T raw agave

pinch Himalayan sea salt………

Use for smoothie bases, cereals, or drink as is. You can also add fresh fruit; strawberries, blueberries, cacao to flavor the milks….

Thai Basil Pesto

*Thai basil pestoThis is not your every day pesto…this pesto is slightly more badass- it could be I am bias seeing as my Thai basil plant took off and my Genovese basil did not….Still, this is a twist between an asian nut sauce, a hoisin sauce and a traditional pesto- are you feeling what I am saying? It’s raw, slightly sweet and dark in flavor, and the ingredients are straight forward- you could even use other kinds of basil and it would still be fantastic.  I made it today in less than 15 minutes. I can use it as a sauce for cold noodles, hot noodles, a dipping sauce for grilled tofu, or a spread on a grilled tofu sandwich. I am thinking that I will most likely have this over noodles tonight or in fresh rolls tomorrow! YUM.

Thai Basil Pesto

2c fresh Thai basil, lightly packed

1/3c raw sprouted almonds

2T brown rice miso or another dark miso

2T extra virgin olive oil

1 cloves garlic*opt

½ lemon juiced

1 1/2T Raw agave, 5 deglet dates, or raw local honey

1t ume vinegar

½ fresh jalapeno or chili pepper

2t hot toasted sesame oil

1/4c unrefined toasted sesame oil

Salt and pepper

Pinch cayenne pepper

Water if needed

Place all of the ingredients in a blender, and process.Blend until smooth and creamy; add the water for desired consistency- up to a 1/4c. Adjust the seasonings to taste (sweeter, saltier etc) to desired final result. Excellent for use in fresh rice rolls, on grilled or broiled tofu, on sandwiches, over soba or your favorite pasta. Delicious!
